Winemaking and Analysis

• Riesling is a single varietal wine and is considered one of Noble vinifera varietals… to many, the most revered of the white winemaking grapes
• Sourced from two vineyards, Warner Vineyards near Centreville, and Johnston Vineyards near Falmouth, NS
• A significant portion of grapes were cold-soaked on their own skins for 72 hours. This greatly enhanced the wild floral notes of the grapes
• It was gently pressed, partially whole cluster, at 1.4 bars; then fermented in the reductive style.
• Using stainless steel with limited exposure to oxygen, accentuating the pure, fragrant characteristics of this unique grape.
• Fermented long and slow at 14˚C to retain aromatic qualities of the grape.
• Small-lot production with only 200 cases produced in 2019

• GRAPES: 100% Riesling
• AROMATICS: Strong wildflower notes, with a touch of reductive character; opens up to fresh citric fruit notes, with subtle honey and ginger aromatics
• TASTE: Naturally bright acidity, fresh but balanced with a slightly off-dry mouthfeel; finishes with key lime and MacIntosh apple characteristics
• TREATMENT: Stainless steel fermentation, cold and slow fermentation
• SERVING SUGGESTIONS: Enjoy chilled with fragrant dishes, spicy cuisine, or local seafood
• AGING: Drinking well now, or cellar through until 2028
