• 100% grown in Nova Scotia
• Grapes originated from Estate and Avonport vineyard locations.
• Whole cluster Leon Millot 15% and L’Acadie 65% were gently pressed and co-fermented, then assembled with 20% of Riesling.
• Individual components add brightness, strawberry and cherry aromatics, with rounded texture and a balanced mouthfeel finished with a touch of bitterness.
• All stainless-steel fermentation
• Fermented long and slow at 14˚C to retain aromatic qualities of the grapes.
• Fermentation halted with a temperature drop slightly before the end of fermentation, to leave a slightly higher or off-dry residual sugar, and to balance the acid structure in the wine.
• AROMATICS: Tropical fruit and Pink Grapefruit notes, with hints of honey and lychee
• TASTE: Fruity, slightly off dry, and balanced; grapefruit, strawberries, and rhubarb notes
• TREATMENT: 100% stainless-steel fermentation
