Red Sky is an appellation. It is Canada’s first cider appellation. To be allowed to call it Red Sky, we had to meet certain production criteria and pass a tasting with a panel of judges, which we did!

To make this cider, we created two blends.

To make the first blend we sourced heritage apples from the Annapolis Valley. These included Cox Orange, Russets, Northern Spy and Jonagold.

We then foraged wild (unknown) apples from Cape Breton shores. Though most of these apples we couldn’t identify, we did discover our favourite apple - the dolgo crab apple. This is a small red apple with pink flesh - it’s super aromatic and floral.

We blended these two varieties together. And the result is a semi-dry cider that’s complex and multilayered. It’s smooth and yet has a nice acidity from the wild apples. Lovely small bubbles. With notes of orange zest, pear and quince.
