Often praised as a favourite for many wine enthusiasts, Riesling is a highly-aromatic, cool-climate-loving, ever-versatile variety known for producing a wide array of wine styles, and pairing with just about any kind of fare.

This 2021 vintage embraces the classic Germanic roots that led to the planting of Riesling in Nova Scotia. Harvested in late October at the tail-end of an eventful vegetative cycle and growing season, the optimal fruit maturity was enhanced by an evening frost, extracting high amounts of concentration and flavour. Fermented and aged in stainless steel vessels, this wine underwent a partial yet lengthy indigenous and unaided fermentation lasting an impressive ten months, then thoughtfully halted ahead of completion. Though this careful arrest of the fermentation has resulted in more residual sugar than previous vintages, it also provides a beautiful balance - the perfect intersection of acidity and unfermented sugar, with the slightest effervesence at first taste. Created in the legendary light, off-dry, low alcohol style of German Kabinett wines, it will be irresistibly delicious in its youth, but unassumingly, could turn into a monument in the cellar over time.

Tasting Notes from Winemaker Jean-Benoit:

In the glass, a light crystalline golden with a limpid green hue. On the nose, delicate notes of white blossom and lemon rind are enterlaced with hints of bee pollen and fleur de sel. On the palate, intimation of peach, ripe apple and melon are brightened with zesty acidity, providing focus to the brilliant core of minerality running through the wine and its clean, long finish.'
