Nova Scotia’s unique coastal-influenced growing environment provides the ideal conditions for the production of traditional method / Méthode Champenoise sparkling wines of great distinction. Our cool-climate and extended hang times creates full-flavoured sparkling grapes with beautiful natural acidities and retained freshness.
This is a single-vineyard, single varietal sparkling from 100% Lightfoot Home Farm Chardonnay. Hand-harvested during the second week of October under ideal ripening conditions with primary fermentation taking place in stainless steel followed by full malolactic fermentation to impart texture and roundness.
Secondary fermentation in bottle took place August 2018 and then the wine was aged 46 months on lees to provide complexity and depth of flavour. Released in May 2022 with a dosage of 8 grams/litre (Brut).

T A S T I N G N O T E S :
Pale-gold with fine, lively bubbles that dance in the glass. Layered nose with crisp Granny Smith apple, white flower and toasted almond. Precise and focused on the palate. Flavours reminiscent of graphite and salty minerality with an elegant, refined mousse and impressive length.
Pairing suggestions include lobster on brioche with green apple slaw, sweet vegetable terrine, oysters or creamed mushrooms on toast.
The structure and profile of this wine suggests it could be cellared, only gaining in complexity and depth over time (5+ years).
