From the winemaker:
The 2016 vintage was warm and dry, delivering perfect growing conditions throughout the
season. The harvest unfolded early, with the vinifera-based traditional method sparkling
wines being picked a week ahead of average, in mid-October. The lack of precipitation
lent a different profile to the wines, with riper fruit aromas and weight, however, the
characteristic maritime acidity that our Nova Scotian wines are renowned for remains.
Picked on October 14th from our “Old Block” of Chardonnay (planted in 1996), the base
wine for our 2016 Brut Réserve was gently pressed and cool-fermented in stainless steel
tanks over two weeks. Aged on lees for 4 months with no malolactic fermentation, the
wine was bottled in early August 2017. After four and a half years in tirage, this Brut Réserve was disgorged in March 2022, and is now ready for release after an additional year under cork.

Tasting note: Golden straw colour in the glass, with a gentle mousse. The nose is full of
yellow pear and red apple, with honey, almond, and a touch of baked pastry. The
palate is rich and weighty but balanced with the freshness and salinity of our coastal
terroir. Orchard fruits and toasted notes give way to a creamy, citrus finish.
