Winemaking and Analysis
• The 2020 Chardonnay is a great example of the stellar growing conditions in that year. Hot and sunny, with favourable weather all season, it was a wonderful vintage
• Desired style was BARREL FERMENTED, displaying the winemaking versatility of the grape… compared to the pure fruit expression of our “Unoaked” version of Chardonnay
• Fruit sourced entirely from our Avonport Vineyard. After 4 years in the ground, this was the first harvest from these grapes
• 100% barrel fermentation in older French Oak, the wine spent 15 months in barrel. Full malolactic fermentation was employed, with regulated batonage or lees stirring, to extract exotic tertiary notes from the lees.
• 400 cases produced
• GRAPES: 100% Chardonnay
• AROMATICS: Subtle caramel, smoky, with a sea salt character. Notes of Bosc pears and lemon rind
• TASTE: Dryish, with a creamy mid-palate texture. Finishes long with a pleasantly soft but complex saline finish.
• TREATMENT: 100% Barrel fermentation (French oak)
• SERVING SUGGESTIONS: Best served well chilled, pairs nicely with charcuterie, rich local seafood, and slow-roasted meats.
• AGING: Drinking very well now, or cellar through 2032
