Winemaking and Analysis
L’Acadie Blanc is Nova Scotia’s signature grape. It thrives in our Maritime climate and is the most commonly planted varietal thriving in our Province
100% of the grapes were grown at our Estate, from some of older, more mature blocks of L’Acadie
50/50 whole berry and crushed fruit gently fermented in cooler temperatures before a light pressing at 1.3 bars
Matured first in stainless steel, followed by 10 months of ageing in older French Burgundian oak barrels.
Only 280 cases were produced.
