2016 Vintage
Hand-harvested from a single block of the organic and biodynamic certified Lightfoot Home Farm Vineyard in Wolfville, Nova Scotia. Grown on the shores of the Minas Basin, where hilly slopes extend the frost-free period and provide excellent exposure.
Natural airflow and incessant saltwater breezes off the basin provide an important moderating effect, especially critical during the winter months when temperatures dip below freezing. Throughout the growing season, these same cool breezes slow ripening, extending the hang times of our fruit. This microclimate creates balanced, full-flavoured grapes that tend to have relatively low sugar content, yet full phenolic maturity and beautifully retained natural acidities. The ultimate result is traditional method sparkling wines that are firmly rooted in a distinct sense of place, characterized by vibrancy, freshness, finesse, and a brilliance and clarity of flavour indicative of very cool climate regions.
Harvested on the 7th of October and whole cluster pressed in a traditional Marzola basket press. Primary fermentation took place in three neutral French oak barriques, with wild yeasts. The base wine was aged in barrel for 14-months prior to bottling in early 2018 for secondary fermentation in bottle.
Aged 62-months on lees prior to disgorgment on March 29th 2023 with a dosage of 4 g/L. Aged an additional 18-months post-disgorgement prior to release.

TASTING NOTES:
Pale straw with a fine, persistent mousse. The nose is layered and refined, offering aromas of freshly baked brioche and lemon shortbread with hints of toasted almond skin and salty beach stones. On the palate, this wine is focused and precise, with vivid acidity and crisp green apple notes bringing focus to the rich, lees-aged flavours. A creamy mid-palate adds depth and speaks to the extended aging on lees, while the distinct minerality and refreshing finish speak to its cool-climate origins.
Pairing suggestions include pan-seared scallops with citrus beurre blanc, fish tacos with zesty slaw and lime crema, crispy potato fritters with herb aioli or grilled lobster tails with garlic herb butter.
