2017 Vintage

Hand-harvested from a single block of the organic and
biodynamic Lightfoot Home Farm Vineyard in Wolfville,
Nova Scotia. Grown on the shores of the Minas Basin, where
rolling hills extend the frost-free period and provide excellent
exposure, this site is uniquely suited to very cool-climate

sparkling wine production.

Natural airflow and persistent saltwater breezes off the basin create an important moderating influence, particularly during the winter months when temperatures dip below freezing.


Throughout the growing season, these same cool breezes slow ripening and extend hang time, allowing fruit to achieve full phenolic maturity at relatively low sugar levels while retaining vibrant natural acidity. The result is traditional method sparkling wines with a strong sense of place, marked by precision, freshness, finesse, and clarity of flavour.


Fruit was hand-harvested and whole-cluster pressed. Primary fermentation took place in neutral French oak barriques, followed by full malolactic fermentation in the base wine.
The wine was bottled for secondary fermentation in bottle and aged on lees for nearly six years (69 months), building complexity, texture, and depth while preserving tension and energy. Disgorged with a restrained dosage to highlight purity and balance.

TASTING NOTES:

Pale straw-gold in colour with a persistent, fine bead.
Aromas of lemon oil, sea spray, and wet stone are layered with subtle notes of toasted brioche and warm spice. The palate is driven by bright acidity, with savoury lees character and a creamy, refined mousse adding depth and length.

Pairing suggestions include butter-poached lobster or scallops, Comté or aged Gruyère gougères, Oysters with mignonette or verjus gelée, wild mushroom tart or mushroom fricassée on toasted sourdough.
